Pumpkin Ice Cream – Vegan

This is an easy recipe and fun to make with kids.  The pumpkin needs to be cooked, cooled and run through a food processor before starting this process. You could also use canned pumpkin.

Into the blender place:

  • 2  cans of coconut milk. Use the full fat coconut milk.
  • 1 1/2 cups of pumpkin (already cooked, cooled, and run through a food processor, or use canned pumpkin)
  • 1 cup of agave
  • 1 tsp cinnamon
  • 1 tsp vanilla

Blend everything and then pour into the electric ice cream maker.  I think this recipe would also make great popsicles (if you don’t have an ice cream maker) but I haven’t tried that yet.
